What it is
A tasting-menu restaurant in Ostermalm, Stockholm, cooking entirely over birch wood in a fire pit, wood oven, flame-set cast iron pan and smoking flue, with no gas or electricity in the kitchen.
Why travelers eat here
Because the constraint produces food you cannot get elsewhere, and because watching a professional kitchen work an open fire for three hours is genuinely absorbing.
