What it is
A tasting-menu restaurant in a purpose-built complex on Refshaleoen, Copenhagen, serving three seasonal menus a year built almost entirely on Nordic ingredients and fermentation.
Why travelers eat here
Because it is the restaurant that changed how the rest of them cook, and it is still doing the thing rather than trading on having done it.
What is genuinely good
Cooking at the top of the profession, three distinct menus across a year, an unusually relaxed dining room for the price, and a kitchen you walk through as part of the meal.
Downsides
The price. The booking lottery. Three closed days a week. A location that needs planning to reach.
Best for
Anyone treating one meal as the reason for the trip, and anyone who follows restaurant cooking closely enough to care about the difference.
Consider eating elsewhere if
You want a great dinner in Copenhagen rather than this specific dinner. The city has a dozen excellent restaurants at a fifth of the price.
Practical advice
Join the newsletter well before you travel, because that is the only way to know when a season's tables are released. Allow four hours. Refshaleoen is a taxi, a harbour bus, or a twenty-minute cycle from the centre.

Menu 4,500 DKK per person. Wine pairing 2,000 DKK, juice pairing 1,500 DKK. Reservations are released seasonally to the newsletter list rather than sold from a booking page.
Getting there
Harbour bus 991 or 992 to Refshaleoen, a taxi from the centre in about fifteen minutes, or a cycle across the harbour bridges.
Where it sits
Refshaleoen, a former shipyard on the eastern harbour that is now the city's most interesting industrial quarter, with Reffen street food and Copenhagen Contemporary nearby.
