It opened in 1935 and is the sushi restaurant that made Ginza sushi a category. The counter is the whole experience: the chef works in front of you, hands each piece across individually, and the pace is set by the chef rather than by you. Lunch is the way in. The same counter in the evening costs several times as much, and for a first experience of a Ginza sushi-ya the lunch sets teach you the same things for a fraction of the money.

A 1935 institution with counter service by chefs who have done nothing else for decades. Lunch sets from 8,250 yen, which for Ginza sushi of this standing is remarkable. English is spoken and the staff are used to visitors.
What nearly ruined the trip
It is still expensive by any normal measure, and the evening bill is in another bracket entirely. The counter is formal and the pace is not yours to set. Booking is needed and the popular slots go early.
